Why keto soups work for weight loss
Soup is a quiet superpower for anyone trying to lose weight. It's mostly water and fiber-rich vegetables, which means high volume for very few calories — you feel full on less. Add a lean protein anchor and a modest amount of healthy fat, and you have a meal that stabilizes blood sugar, curbs late-night snacking, and reheats beautifully for lunch the next day.
A few ground rules our nutrition coaches use when writing keto soup recipes:
- Anchor every bowl with protein. Aim for a palm-sized portion of chicken, turkey, lean beef, fish, or eggs per serving.
- Skip starchy thickeners. No flour, no cornstarch, no potato. Use cream cheese, heavy cream, pureed cauliflower, or an egg-yolk temper instead.
- Watch hidden carbs in broth. Many store-bought broths add sugar or maltodextrin — read the label and choose low-sodium, no-sugar-added.
- Use non-starchy vegetables. Cauliflower, broccoli, mushrooms, spinach, kale, celery, zucchini, and leafy greens are your friends.
- Cook once, eat three times. Every recipe below scales to 6 servings and freezes well in single-portion containers.
1. Buffalo Chicken Soup
All the flavor of a game-day wing platter, none of the breading. Creamy, spicy, and packed with shredded chicken.
Ingredients (serves 6): 1.5 lbs boneless skinless chicken breast, 6 cups low-sodium chicken broth, 4 oz cream cheese, 1/2 cup heavy cream, 1/2 cup buffalo-style hot sauce, 2 stalks celery (diced), 1/2 cup diced yellow onion, 2 cloves garlic, 2 tbsp butter, 1/2 cup crumbled blue cheese, chopped scallions.
Method: Sauté onion, celery, and garlic in butter until soft. Add broth and raw chicken breasts, simmer 20 minutes, then remove chicken and shred. Whisk cream cheese and heavy cream into the pot until smooth, stir in hot sauce, return chicken. Finish with blue cheese and scallions.
Approx. 6g net carbs per serving.
2. Broccoli-Cheddar Soup
The steakhouse classic, made keto by ditching the flour roux. It thickens naturally from pureed broccoli stems and sharp cheddar.
Ingredients (serves 6): 6 cups broccoli florets and stems, 4 cups low-sodium chicken or vegetable broth, 1 cup heavy cream, 3 cups shredded sharp cheddar, 1/2 cup diced onion, 3 cloves garlic, 3 tbsp butter, 1/2 tsp smoked paprika, salt and pepper.
Method: Sweat onion and garlic in butter. Add broth and broccoli, simmer until fork-tender (about 12 minutes). Blend half the pot until smooth, then return to the pan. Off heat, stir in cream and cheese a handful at a time until melted and glossy. Season with paprika, salt, and pepper.
Approx. 7g net carbs per serving.
3. Zuppa-Style Sausage & Kale Soup
A restaurant-favorite creamy soup, rebuilt with Italian-seasoned ground turkey and cauliflower florets in place of the traditional potato and cured meat. It tastes like the original — promise.
Ingredients (serves 6): 1 lb ground turkey (or ground beef), 1 tbsp Italian seasoning, 1 tsp fennel seed, 1/2 tsp crushed red pepper, 1 tsp smoked paprika, 1/2 cup diced onion, 4 cloves garlic, 6 cups low-sodium chicken broth, 3 cups small cauliflower florets, 3 cups chopped lacinato kale, 1 cup heavy cream, grated Parmesan.
Method: Brown the turkey with Italian seasoning, fennel, red pepper, and smoked paprika — this is where the sausage-y flavor comes from. Add onion and garlic, cook 3 minutes. Pour in broth and cauliflower, simmer 10 minutes until tender. Add kale and cream, simmer 2 more minutes. Top with Parmesan.

4. Italian Wedding Soup (No Pasta)
Tiny herbed meatballs, tender greens, and a bright lemon-Parmesan broth. Riced cauliflower stands in for the traditional acini di pepe pasta.
Ingredients (serves 6): 1 lb ground beef or ground turkey, 1 egg, 1/3 cup grated Parmesan, 2 tbsp almond flour, 1 tsp garlic powder, 1 tsp Italian seasoning, salt and pepper. For the broth: 8 cups low-sodium chicken broth, 1/2 cup diced onion, 2 stalks celery, 2 cloves garlic, 1 cup riced cauliflower, 4 cups baby spinach, juice of 1/2 lemon, extra Parmesan for serving.
Method: Mix meatball ingredients and roll into small marbles (about 30). Sweat onion, celery, and garlic in a large pot, add broth, and bring to a simmer. Drop in meatballs and cook 8 minutes. Add riced cauliflower, then spinach, and finish with a squeeze of lemon.
Approx. 5g net carbs per serving.
5. Creamy Mushroom Soup
Deeply savory and completely plant-forward — a great meatless option for one weeknight a week. Use a mix of cremini, shiitake, and button mushrooms for depth.
Ingredients (serves 6): 1.5 lbs mixed mushrooms (sliced), 1/2 cup diced onion, 4 cloves garlic, 3 tbsp butter, 2 tbsp olive oil, 1 tbsp fresh thyme, 5 cups low-sodium vegetable broth, 1 tbsp balsamic vinegar, 1 cup heavy cream, 2 oz cream cheese, salt and cracked black pepper.
Method: Sear mushrooms in butter and olive oil in batches until deeply golden — this step is worth the patience. Add onion, garlic, and thyme. Deglaze with balsamic vinegar, then add broth and simmer 15 minutes. Blend half the pot for body, return, and stir in cream and cream cheese until silky.
