MedexClinic Health Library5 One-Pan Keto Dinner Recipes for Busy Weeknights
Weeknights are hectic, and sticking to a low-carb plan after a long day can feel impossible. That's why we put together five fast, one-pan keto dinner recipes you can cook in about 30 minutes — with real macros, easy swaps, and zero fussy ingredients. Every recipe here fits a doctor-led weight-loss framework, uses everyday grocery-store proteins, and cleans up in a single pan or sheet tray.
These meals were curated with input from Dr. Asim Nouman, MD, an experienced physician with 18+ years of clinical practice in weight loss and obesity medicine at MedexClinic. Whether you're just starting keto or fine-tuning a plan you already love, these dinners keep protein high, carbs low, and flavor uncompromised.
What makes a dinner truly "keto"?
A keto-friendly dinner keeps net carbs low (usually under about 10 grams per serving), moderate in protein, and higher in healthy fats — so your body stays in nutritional ketosis and continues to burn stored fat for fuel. Practically, that means non-starchy vegetables, quality proteins like chicken, salmon, or grass-fed beef, and cooking fats like olive oil, avocado oil, butter, or ghee.
A quick checklist before you shop:
- Skip: rice, pasta, bread, potatoes, corn, sweetened sauces, and sugary marinades.
- Choose: leafy greens, cauliflower, broccoli, zucchini, bell peppers, mushrooms, asparagus, and cabbage.
- Fats that work: extra-virgin olive oil, avocado oil, grass-fed butter, ghee, and avocado.
- Flavor boosters: garlic, fresh herbs, citrus, smoked paprika, mustard, tamari or coconut aminos, and vinegar.
- Watch labels: many bottled dressings, teriyaki sauces, and marinades hide added sugar.
1. Sheet-Pan Lemon-Garlic Salmon with Asparagus
Sheet-pan salmon is a weeknight hero: 25 minutes start to finish, minimal cleanup, and full of omega-3s that support cardiovascular health.
Ingredients (serves 4): 4 salmon fillets (about 6 oz each), 1 lb asparagus (trimmed), 3 tbsp olive oil, 4 cloves garlic (minced), zest and juice of 1 lemon, 1 tsp smoked paprika, salt and pepper, chopped parsley to finish.
Method: Heat oven to 425°F. Toss asparagus with 1 tbsp olive oil, salt, and pepper on a lined sheet pan. Push to the sides and place salmon in the center. Whisk remaining oil with garlic, lemon zest, juice, and paprika; spoon over salmon. Roast 12–14 minutes until salmon flakes easily. Finish with parsley.
Approx. macros per serving: ~410 kcal • 32 g protein • 28 g fat • 5 g net carbs.
Swap: Substitute cod or trout for salmon; swap asparagus for broccolini or green beans.
2. Garlic-Butter Chicken Thighs with Spinach & Mushrooms
Bone-in, skin-on chicken thighs stay juicy and crisp up beautifully in one skillet. This is the kind of dinner people request seconds of.
Ingredients (serves 4): 8 bone-in, skin-on chicken thighs, salt and pepper, 2 tbsp olive oil, 3 tbsp butter, 6 cloves garlic (sliced), 8 oz cremini mushrooms (sliced), 5 oz baby spinach, 1/2 cup low-sodium chicken broth, juice of 1/2 lemon, chopped thyme.
Method: Pat thighs dry, season well. Sear skin-side down in olive oil over medium-high 6–7 minutes until golden; flip and cook 8 more minutes. Remove. Add butter, garlic, mushrooms; cook 4 minutes. Deglaze with broth and lemon juice, add spinach until wilted. Nestle chicken back in, simmer 3 minutes, sprinkle thyme.
Approx. macros per serving: ~520 kcal • 38 g protein • 38 g fat • 4 g net carbs.
Swap: Use boneless thighs (reduce cook time); swap spinach for kale or arugula.
3. Ginger-Sesame Beef Stir-Fry over Riced Cauliflower
All the takeout satisfaction, none of the sugar-loaded sauce. Riced cauliflower soaks up the ginger-sesame glaze like a champ.
Ingredients (serves 4): 1.25 lb flank steak (sliced thin against the grain), 2 tbsp avocado oil, 1 tbsp fresh ginger (grated), 3 cloves garlic (minced), 1 red bell pepper (sliced), 2 cups broccoli florets, 3 tbsp coconut aminos (or tamari), 1 tbsp toasted sesame oil, 1 tsp rice vinegar, 1 tsp erythritol or monk fruit sweetener (optional), 4 cups riced cauliflower, scallions and sesame seeds to finish.
Method: Heat 1 tbsp avocado oil in a large skillet or wok over high heat; sear beef 2 minutes per side, remove. Add remaining oil, ginger, garlic, pepper, and broccoli; stir-fry 4 minutes. Return beef, add coconut aminos, sesame oil, vinegar, and sweetener; toss 1 minute. Meanwhile sauté riced cauliflower in a separate pan with a splash of oil and salt for 5 minutes. Serve beef over cauliflower rice; top with scallions and sesame seeds.
Approx. macros per serving: ~460 kcal • 34 g protein • 30 g fat • 8 g net carbs.
Swap: Use sirloin, ground beef, or sliced chicken breast; swap broccoli for bok choy or snow peas.
4. Mediterranean Baked Cod with Zucchini & Olives
Bright, briny, and light — this one-pan cod bake tastes like coastal vacation food and comes together in under 25 minutes.
Ingredients (serves 4): 4 cod fillets (about 6 oz each), 2 medium zucchini (sliced into half-moons), 1 pint cherry tomatoes, 1/2 cup pitted Kalamata olives, 3 tbsp olive oil, 2 tsp dried oregano, 3 cloves garlic (minced), juice of 1 lemon, crumbled feta (optional), fresh basil.
Method: Heat oven to 400°F. Toss zucchini, tomatoes, and olives with 2 tbsp olive oil, oregano, garlic, salt, and pepper on a sheet pan; roast 10 minutes. Nest cod on top, drizzle with remaining oil and lemon juice, and bake 12 more minutes until fish flakes. Top with feta and basil.
Approx. macros per serving: ~340 kcal • 32 g protein • 20 g fat • 7 g net carbs.
Swap: Substitute halibut, snapper, or chicken cutlets; swap zucchini for eggplant.
5. Skillet Turkey & Cabbage "Unstuffed Rolls"
All the cozy, savory goodness of stuffed cabbage rolls — deconstructed into a 30-minute skillet dinner that reheats beautifully for lunch the next day.
Ingredients (serves 4): 1.25 lb ground turkey (93/7), 2 tbsp olive oil, 1 small onion (diced), 4 cloves garlic (minced), 1 tsp smoked paprika, 1 tsp dried thyme, 6 cups shredded green cabbage, 1 cup crushed tomatoes (no sugar added), 1/2 cup low-sodium chicken broth, 1 tbsp balsamic vinegar, salt and pepper, chopped parsley.
Method: Heat olive oil in a large skillet, sauté onion 3 minutes, add garlic 30 seconds. Add turkey, paprika, and thyme; brown 6 minutes. Stir in cabbage, tomatoes, broth, and balsamic vinegar. Cover and simmer 12–14 minutes until cabbage is tender. Season and finish with parsley.
Approx. macros per serving: ~380 kcal • 34 g protein • 22 g fat • 9 g net carbs.
Swap: Use ground beef, lamb, or chicken; swap cabbage for shredded Brussels sprouts.
How keto dinners fit into a doctor-led weight-loss plan
Recipes are only one piece of the puzzle. A sustainable weight-loss plan also considers your metabolism, medical history, sleep, stress, activity, and — when clinically appropriate — physician-supervised options like GLP-1 therapy discussed during a consultation. At MedexClinic in Jacksonville, our team builds personalized plans around your real life, not a generic meal template.
Dr. Asim Nouman and the MedexClinic care team help patients decide which combination of nutrition, movement, and medical support fits their goals. Keto isn't right for everyone — for example, people with certain kidney, liver, or pancreatic conditions, or those who are pregnant or breastfeeding, should speak with a physician before starting a very-low-carb diet.
Tips to make keto weeknights sustainable
- Batch-prep proteins on Sunday — grill or roast enough chicken, salmon, or beef for two dinners.
- Keep frozen vegetables like riced cauliflower, broccoli, and green beans stocked for zero-prep sides.
- Master five sauces (garlic-butter, lemon-herb, sesame-ginger, chimichurri, tomato-basil) and rotate them across proteins.
- Watch electrolytes — sodium, potassium, and magnesium often need attention on keto, especially in the first few weeks.
- Hydrate generously — Florida heat plus a lower-carb diet means you'll want more water than usual.
- Plan one "repeat" meal per week — a dinner you already know you love takes decision fatigue off the table.
